# Expert Advice:

01 -
  • Everything cooks in one skillet, so cleanup takes about two minutes and you can eat straight from the pan if nobody's watching.
  • The briny olives and creamy feta make it feel indulgent even though it's completely keto-friendly and light.
  • It's flexible enough to handle whatever greens or herbs you have wilting in the crisper drawer.
02 -
  • Ground chicken dries out fast if you overcook it, pull it off the heat as soon as it's just cooked through and let carryover heat finish the job.
  • Add the spinach in handfuls if your skillet is crowded, it wilts down dramatically and makes room as it cooks.
  • Don't skip the lemon juice at the end, it wakes up every other flavor and keeps the dish from tasting one-note.
03 -
  • Use a cast iron skillet if you have one, it holds heat beautifully and gives the chicken better browning.
  • Crumble the feta over the skillet while it's still hot so it softens slightly and melts into little pockets of creamy goodness.
  • Taste before serving and add an extra squeeze of lemon or pinch of salt, bold flavors need a little nudge to really shine.
